1 1/4 pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content
1 1/4 teaspoons baking soda
2 1/2 sticks (1 1/4 cups) unsalted butter
2 teaspoons natural vanilla extract
1 2/3 cups (8 1/2 ounces) bread flour
Sea salt.

Procedure:

Sift the flours, baking powder, baking soda, and salt into a bowl and leave it aside. Now, in a mixer, add the butter along with the sugars till it becomes light. It should take about 5 minutes on medium speed. Add the eggs, one at a time and continue mixing well.

Add the vanilla extract and then turn the speed to low. Carefully add the dry ingredients and let it combine for about 10 seconds. Then fold in the chocolate chips using a spatula and empty it out onto plastic wrap.

Store it in the fridge for a day or more. When it’s time to bake, preheat the oven to 350 degrees Fahrenheit. To a baking tray, add parchment paper and then scoop the dough into 3 ounce balls and place them on it. Space them out so you get around 6 balls on one tray.

Ingredients:

11/2 teaspoons salt
3/4 cup peanut butter chips
3/4 cup milk chocolate chips
8 ounces (1 cup + 2 tablespoons) granulated sugar
11/2 teaspoons baking powder
10 ounces (1 1/2 cups) light brown sugar
Fleur de sel, for sprinkling
11/4 teaspoons baking soda
2 eggs
81/2 ounces (2 cups) bread flour
81/2 ounces (2 cups + 2 tablespoons) cake flour
11/4 cups unsalted butter, at room temperature
1/2 cup creamy peanut butter
11/2 cups (8-ounce bag) mini peanut butter cups, halved
2 teaspoons vanilla extract

Procedure:

Mix the flour varieties, salt, and baking soda and powder in a bowl and leave aside. In a mixer, add the butter and peanut butter and mix till light. It should take about 2 minutes. Now add the sugar varieties and continue to mix for another 4 minutes or till very light.
