Add potatoes, carrots, and green beans. Continue cooking for approximately 4 to 5 minutes while stirring constantly.
Add the stock and increase the heat to high in order to bring your soup to a simmer. Once simmering, add corn, tomatoes, and pepper. Reduce the heat intensity to low, cover the stockpot, and cook for about 25 to 30 minutes until the vegetables become fork tender.
Remove from the heat source and add lemon juice and parsley. Season with kosher salt in order to taste. Serve instantly.

Vegetable Soup With Spinach Pistou and White Bean
1/4 teaspoon of salt.
2 stalk celery.
1/2 cup frozen chopped spinach.
1/2 tablespoon of freshly squeezed lemon juice.
4 oz. bacon.
5 cups lowsodium chicken broth.
2 tablespoons of parsley.
1/2 teaspoon of anise seed.
1/4 teaspoon ground black pepper.
1 medium sized onion.
1/2 cup extra virgin olive oil.
1 cup canned whole tomatoes.
2 clove garlic.
2 cups of dried navy beans.
Soak the beans in a large saucepan and bring to boil over high-heat for about an hour. Drain and set aside. In another huge pot over medium heat, cook bacon until browned.
Add celery and onions and saute for 5 minutes until translucent. Add the beans, chicken soup, and anise seeds. Bring to boil, then lower the heat and simmer, for about 30 minutes with the pot covered.
Add minced parsley, tomatoes, pepper, and 1/4 teaspoon salt and let it continue to simmer for approximately 1 hour until the beans become tender.
To make the pistou, place 1/4 cup chopped parsley, frozen spinach, olive oil, lemon juice, garlic and the remaining salt in the bowl of a food-processor fitted with a metal blade. Process until smooth and set aside.
Pour the soup into bowls and top with 2 tablespoons of pistou. Serve straight away with Parmesan crisps.

Tuscan Vegetable Soup
-1 tablespoon of olive oil.
-15-ounce low sodium drained and rinsed cannellini beans.
-2 cups of chopped baby spinach leaves.
-1/2 teaspoon salt.
-33-ounces low-sodium vegetable or chicken broth.
-1 Minced clove garlic.
